It doesn't just come from the soils Derek treads as he checks the vines throughout the season. It's not just in the skins and flesh of the dark red grapes Kirsten peels open to show customers as they tour the family estate. It doesn't just come from the smooth, tight grains of French oak Derek carefully selects to rest the wine in for two years. Nor is it just the mouthfeel of each distinctly different wine. It is all these things combined, that provided the inspiration to create the Paisley Texture Single Vineyard Shiraz series.
The Texture series features three distinct Shiraz built on generous fruit, hands on winemaking, expressive soils and quality oak. Amazing fruit from 90-year-old to 22-year-old vines, planted in three of the Barossa's unique Grounds Zones, offered Derek the perfect foundation for the Texture series.
The creation of this series. for Paisley owners Derek and Kirsten, was about pulling together all the elements that go into a great wine, starting at the very beginning of the journey with quality grapes. The elevation and aspect of the vineyard, vine age and soils were important and so was the fruit weight and choosing the perfect French oak barrels.
In 2019 Derek picked three parcels of fruit to create the perfect Shiraz for every palate.
Together these three wines offer a luxurious tour of the sub-regions of the Barossa, while paying homage to the style and texture to Shiraz.
Ebenezer Shiraz
Starting at Ebenezer, located in the Northern end of the Barossa Valley at an altitude of 280m, vine age of 45 years. This vineyard has earthy rich red clay soil with ironstone and quartz. Of the three, the Ebenezer is the most approachable young. The colour is deep purple, red with aromas of lifted blackberry, raspberry coulis, some earthy notes and roasted meats. The full bodied palate has plush blackberry fruit, kalamata olives, earthy beetroot and coffee beans. The open framed palate has impressive mouthfeel with a rich creamy texture followed by soft, velvety tannins.
It finishes long and balanced with lovely length of dark berry fruit and mocha oak. Recommended drinking from 2023 - 2030.
